apple cheesecake pie

  Prep Time: 1 hrs Cook Time: 40 min

Yield: 8 servings 

CRUST
Double Crust	Classic Crisco Pie Crust
CHEESECAKE FILLING
1 (8 oz.)	package cream cheese, softened
1/3	cup sugar
1	large egg
1	tablespoon apple juice
1/2	teaspoon vanilla extract
APPLE FILLING
1/2	cup sugar
1	tablespoon cornstarch
1/2	teaspoon ground cinnamon
1/4	teaspoon salt
6	cups peeled, cored, sliced Jonathon or Granny Smith apples (about 2 lbs. or 4 large)
2	tablespoons butter

1.	PREPARE recipe for double crust pie. Roll out dough for bottom crust. Place in 9-inch pie plate. Press to fit without stretching dough. Trim even with pie plate. Heat oven to 375°F.
2.	COMBINE cream cheese, 1/3 cup sugar, egg, apple juice and vanilla in small bowl. Beat with electric mixer on medium speed until creamy. Spread evenly in unbaked pie crust.
3.	COMBINE 1/2 cup sugar, cornstarch, cinnamon and salt in small bowl. Place apple slices in large bowl. Sprinkle with sugar mixture and toss to coat. Spoon over cheesecake filling in pie crust. Moisten pastry edge with water.
4.	ROLL out dough for top crust Place onto filled pie. Trim 1/2-inch beyond edge. Fold top crust under bottom crust edge to seal. Crimp and flute edges. Cut slits in top crust or prick with fork to allow steam to escape.
5.	BAKE 60 to 65 minutes or until apples are tender and crust is golden brown. Cool completely on wire rack before serving. Store in refrigerator.

Fall and life

i know its fall outside! its cooler and the leaves are turning so many different pretty colors!!! if it could stay like this until spring and not snow i would be the happiest person you have ever seen! just getting over pneumonia too ! so not fun! still have a stuffy nose and a little cough, hoping it goes away ASAP.  doing laundry and waiting on all the kiddos to get here !  have a great day everyone!

its been so long.

well since i last posted i went home to florida and had the most amazing time with my family. i got to hang out with my sister and my nephew, that was the best part of it all. then got back to alaska didn't know i was pregnant until i was having a miscarriage. it never gets any easier. but i know everything happens for a reason and god had a plan. i am going to be moving back home as soon as my hubby gets a job there. know one but my family knows this. so i thought i would share for anyone that reads this thing! other than that just been so very homesick. and not sure how i feel about a lot of things anymore either.

i started watching a new little boy named matty he is oh so cute!!! i have been trying to get over a cold and i have a feeling i am trying to get another one!! not much going on other than all this. i want to go home now. i miss my mom. i miss my sister and nephew. i miss my dad. i miss my brothers.

home

isn't it crazy that as we grow up we say and do what we can to get out of there? the home town, the parents, the state. then as we grow into adults, all the family and the hometown doesn't seem so bad and we do what we can to get back there. sometimes things aren't as bad as they seem. i miss home. i miss my mom. i miss my dad. i miss my brothers. i miss my sister and nephew. i miss my friends. i miss the hometown. people never realize what they really have until its not longer at an arms reach. a hug from mom makes everything better. laughing with your brothers over nothing. its just the little things, but are so big when they aren't there...........i can't wait to go visit in 7 days. i need it more than i can even tell anyone.

Summer

Summer has begun! The best thing about this summer? I get to go HOME !! There are no words to explain how happy I am ! I miss my family so much. Makes u stop and think about family when they aren't around the corner !

Life

Life isn't always what we want it to be. Life isn't always what it should be. How u choose to handle things in ur own life is ur business. But u must also be able to except the reaction to ur actions ! Life is a guessing game. Nothing is ever set in stone. One bad thing can turn into a million good things. One good thing can turn into a million bad things. Life isn't always fair. Life ain't always beautiful but it's a beautiful ride.

Dream a little dream

As i lay down to sleep I think about so many things. Does my brother feel better? Did I tell everyone I love them? Did I say a prayer for everyone? Will it help?

So here it is feel better bubby. I love all of u so much. Dear lord please protect the ones I love. Please protect the ones I don't. Please be there for the people I can't be there for. Please keep everyone safe. Please watch over amber and her baby growing bigger and stronger in her tummy everyday. Amen.

the mind of a 4 yr old

today i had on country music so we could dance. the song we all bleed red come on and we stopped for a bit. its amazing the words kids hear when a song comes on. he thinks they say we all eat bread. he was told the words and said not is bread i like bread! when he hears lover lover. he says lover lover you don't treat me right i am leaving to the chicken nuggets house!

the innocent mind of child sometimes makes me laugh more than it should. life was so much easier when we were littler. didn't have to worry about anything but playing outside and being a kid. its fun to sit back and think i used to think that way too!! (and then feel really old ! lol)

i miss the days of cooties and no worries. but at the same time i like making my own choices as a grown up! its good though to keep a little bit of the innocent child in all of us.

today

Its so beautiful outside today!!! i am so glad the snow is all done and the leaves are back on the trees in a green you only dream about! one of the kids i watch said "its summer the sunshine is out and i just saw a bee!" he is so very right. sunrise at 4:45 am and sunset at 11:00 pm? its amazing!!

life here is going fairly well. i have made some pretty amazing friends here. it still isn't home to me yet. you would think after almost 5 years it would be. florida is home always will be. i miss my family so much there, sometimes its hard to believe how far away i am. i can't wait to visit this summer. its very much needed on my part!
